BELINDA’S BREAD
3 cups warm water 375 for 30 min
2 Tbls yeast makes 2 loaves
1/4 cup sugar
1 Tbls salt
1 egg (optional)
1/2 stick of butter
About 8 cups flour
Mix the yeast, sugar and warm water together. Add the salt, optional egg and butter and mix. Add the flour a couple cups at a time till you have a nice dough. Divide and place in 2 bread pans and turn the oven on to 375 to heat up. After 20 minutes or so, put the loaves in the oven and in half an hour you’ll have a couple of delicious loaves to enjoy.
I’ve used this recipe for dinner rolls as well as pizza dough and it works wonderfully.
BIG MAMA’S CONCH FRITTERS
1 finely diced onion
1 finely diced tomato
1 finely diced bell pepper
3 cloves of garlic finely chopped
3 diced conch
3 Tbls thyme
2 tsp salt
1 Tbls pepper
2 tsp baking powder
2 cups flour
add hot sauce if you’d like
Mix all ingredients together and drop by table spoons full into hot oil. Brown completely and drain on paper towel. Dip into a mixture of mayo and ketchup. I like to squeeze lemon on the too. So delicious!
